Simple Roasted Chicken & Vegetables

Ingredients:
- 4 chicken thighs or breasts
- 3 cups mixed vegetables (potatoes, carrots, broccoli)
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (optional)
Instructions:
- Preheat oven to 200°C (400°F).
- Cut vegetables into bite-sized pieces.
- On a large baking sheet, toss vegetables and chicken with olive oil, garlic powder, paprika, salt, and pepper.
- Arrange in a single layer with chicken pieces on top.
- Roast for 35-40 minutes until chicken is cooked through and vegetables are tender.
- Let rest 5 minutes before serving.
Quick Beef Stir-Fry
A speedy stir-fry with tender beef and crisp vegetables.
Ingredients:
- 500g beef sirloin, thinly sliced
- 3 cups mixed vegetables (bell peppers, snap peas, carrots)
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 teaspoon fresh ginger, grated
- Cooked rice for serving
Instructions:
- Toss beef with cornstarch until coated.
- Heat oil in a large pan or wok over high heat.
- Add beef and cook 2-3 minutes until browned. Remove and set aside.
- Add vegetables, garlic, and ginger. Stir-fry for 4-5 minutes.
- Return beef to pan, add soy sauce, and toss everything together.
- Cook for 2 more minutes. Serve over rice.
Creamy Tomato Pasta
A comforting pasta dish that tastes like it took hours.
Ingredients:
- 400g pasta (penne or rigatoni)
- 1 can (400g) crushed tomatoes
- ½ cup heavy cream
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- ½ teaspoon dried basil
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh basil (optional)
Instructions:
- Cook pasta according to package directions. Reserve 1 cup pasta water before draining.
- In a large pan, heat olive oil over medium heat. Add garlic and cook for 1 minute.
- Add crushed tomatoes and dried basil. Simmer for 10 minutes.
- Stir in heavy cream and season with salt and pepper.
- Add cooked pasta to sauce, tossing to coat. Add reserved pasta water if needed to thin sauce.
- Serve with grated Parmesan and fresh basil.
