Ingredients:

  • 4 chicken thighs or breasts
  • 3 cups mixed vegetables (potatoes, carrots, broccoli)
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions:

  • Preheat oven to 200°C (400°F).
  • Cut vegetables into bite-sized pieces.
  • On a large baking sheet, toss vegetables and chicken with olive oil, garlic powder, paprika, salt, and pepper.
  • Arrange in a single layer with chicken pieces on top.
  • Roast for 35-40 minutes until chicken is cooked through and vegetables are tender.
  • Let rest 5 minutes before serving.

Quick Beef Stir-Fry

A speedy stir-fry with tender beef and crisp vegetables.

Ingredients:

  • 500g beef sirloin, thinly sliced
  • 3 cups mixed vegetables (bell peppers, snap peas, carrots)
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 teaspoon fresh ginger, grated
  • Cooked rice for serving

Instructions:

  • Toss beef with cornstarch until coated.
  • Heat oil in a large pan or wok over high heat.
  • Add beef and cook 2-3 minutes until browned. Remove and set aside.
  • Add vegetables, garlic, and ginger. Stir-fry for 4-5 minutes.
  • Return beef to pan, add soy sauce, and toss everything together.
  • Cook for 2 more minutes. Serve over rice.

Creamy Tomato Pasta

Ingredients:

  • 400g pasta (penne or rigatoni)
  • 1 can (400g) crushed tomatoes
  • ½ cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ teaspoon dried basil
  • Salt and pepper to taste
  • Parmesan cheese for serving
  • Fresh basil (optional)

Instructions:

  • Cook pasta according to package directions. Reserve 1 cup pasta water before draining.
  • In a large pan, heat olive oil over medium heat. Add garlic and cook for 1 minute.
  • Add crushed tomatoes and dried basil. Simmer for 10 minutes.
  • Stir in heavy cream and season with salt and pepper.
  • Add cooked pasta to sauce, tossing to coat. Add reserved pasta water if needed to thin sauce.
  • Serve with grated Parmesan and fresh basil.
